The loin is from the top of the rib cage, where the pork yields lean meat, with creamy fat covering. This is carefully cut out, with the bone removed, before being skilfully chopped into neat steaks. Pork Loin Steaks are a forgotten cut coming back into fashion, with the fat covering offering rich succulence upon cooking, and the meat itself reflecting the quality of our native breed pork. This steak is very versatile, being well suited to grilling, frying, slow cooking, or griddling. If frying, cook for five to six minutes on high heat and serve with macaroni cheese.
